Khichri with Peas and Carrots |

Ingredients: |
- 1 cup basmati rice
- 1 cup red lentils or split mung dal
- ½ cup peas (frozen)
- ½ cup carrots (cubed)
- 1 tbsp oil
- 1 tsp salt (optional)
- ½ tsp turmeric powder
- 1 tbsp coriander powder and 1 tbsp cumin powder
- ½ tsp chilli powder
- ½ inch finely chopped ginger
- 1 tbsp chopped fresh coriander

Instructions:
- Mix rice and lentils and wash until the water turns clear.
- Put the mixture in a heavy bottom pan and add 4 ½ cups of water.
Add the salt and turmeric. Add carrots and stir well.
- Bring to a boil on high heat. Add peas. Turn to medium heat and
continue cookingcovered until the rice and lentils are soft (in
approximately 20-30 minutes), stirring occasionally. Add more hot
water to the pan as needed to keep themixture moist.
- In a frying pan, heat the oil on medium and fry the ginger for
½ minute.
- Add coriander, cumin, and chilli powder and fry for another ½
minute.
- Mix half of the spiced oil in the khichri and save the other
half to garnish.
- Transfer khichri to the serving dish and server garnished with
spiced oil and chopped coriander.
Notes:
- Adjust Spices according to taste.
- This is a very nutritional
and easy to cook dish. According to Ayurveda, it is also a very healing dish.
