Mung Dal Khichri with Spinach |

Ingredients: |
- 1 cup split green Mung dal (or red lentil)
- ½ cup basmati rice
- 1 cup chopped spinach
- 2 tsp oil / butter
- 1 tsp salt
- 1 tsp turmeric
- 1 tsp Chilli powder
- ½ tbsp cumin seeds
- 1 tbsp coriander powder
- 1 tbsp ginger chopped & 1 tsp lime juice
- ½ tomato sliced (to garnish)
- a pinch of Hing (Asafoetida) -- optional

Instructions:
- Wash dal/ lentil and rice few times and add 2 ½ cup water and salt and turmeric.
- Bring to a boil on high heat and remove the scum if any. Turn the heat to low, simmer until the dal and rice is soft then add spinach.
- Let Khichri simmer 10-15 minutes more.
- On another burner heat oil in frying pan until it is hot.
- Add cumin seeds until the seeds sizzle and swell up.
- Add chilli, coriander powder and hing.
- Now add ginger and fry for ½ minute.
- Mix this spiced mixture and limejuice to the Khichri.
- Garnish with tomato slices.
Notes: adjust spices according to taste. |
